Jellied Cranberry Sauce Recipe

Makes 1-1/4 cups

Ingredients:

1 8oz bag cranberries, fresh or frozen
1/2 to 3/4 C low-cal sweetener to taste
1 C water

Optional: 3/4″ fresh ginger root, peeled and finely chopped or grated orange rind to taste

Instructions:

Simmer the water with sweetener and ginger covered for 10 minutes. Rinse cranberries and add. Cover and simmer for 20 min or until the cranberries have broken up and the skins are soft.
