Makes: 6 servings
An easy no-cook treat that is very decorative and yummy
6 fresh dates (usually kept in the cold cabinets in the produce section of supermarkets)
About 1⁄4 cup fat free ricotta
2 tablespoons finely chopped crystallized orange or lemon peel
A little extra peel to decorate
1. Cut the dates carefully in half lengthwise and remove the pit.
2. Mash together the ricotta and peel and fill the date halves.
3. Decorate with a little extra peel, and arrange on a beautiful plate, perhaps with some fresh berries to add color and variety.
